Peggy Hill is many things: she's a mother. A boggle champ. A substitute teacher (substitute teacher of the year twice, in fact). A sculptor. A foot fetish model. A kidnapper. A survivor of a fall from 13,000 feet without a parachute. The mother of the 15th Dalai Lama. She is by her own admission, however, not a very good cook. Will her specialty dishes make it into the clean plate club?

 

Ingredients

Frito Chili Pie

  • 2 cans chili

  • 1 bag of Fritos

  • Shredded cheese


Spa-Peggy and Meatballs

  • 1 pound ground beef

  • 1 egg

  • ½ cup bread crumbs

  • Splash of milk

  • Garlic powder

  • Onion powder

  • Oregano

  • Dried basil

  • Salt

  • Pepper

  • Parmesan cheese

  • Spaghetti

  • 1 onion

  • 1 clove garlic

  • 1 can crushed tomatoes

  • Pinch of sugar


Apple Brown Betty

  • ½ pound brown sugar

  • 1 tsp ground cinnamon

  • ½ tsp ground ginger

  • ¼ tsp ground allspice

  • ⅛ tsp ground cloves

  • 10 granny smith apples, cored and sliced

  • Breadcrumbs

  • 1 stick of butter

Method

Frito Chili Pie

  1. Start by putting 2 cans of chili into a pot, covering and bringing to a bare simmer.

  2. Butter up a large glass pie plate.

  3. Add a layer of chili to the bottom of the pie plate followed by a layer of Fritos, a layer of cheese, and another layer of chili.

  4. Place in the oven at 375°F for 20 minutes.

  5. Remove from oven and top with another layer of cheese followed by a layer of Fritos.

  6. Place back in the oven for 5 minutes.

  7. Remove and let cool for 5 minutes.

  8. Serve and enjoy!


Spa-Peggy and Meatballs

  1. In a large glass bowl combine 1 pound of ground beef with 1 egg, ½ cup of breadcrumbs, a splash of milk, a few dashes each of garlic powder, onion powder, oregano, dried basil, salt, and pepper. Add a healthy sprinkling of parmesan cheese. Mix to combine.

  2. Roll into balls and bake at 400°F for 15-20 minutes.

  3. In a large pan add 1 diced onion. Let it sweat for a few minutes before adding one clove of minced garlic. Let cook for a minute or until fragrant before adding 1 can of crushed tomatoes. Let simmer for 30 minutes and then add a pinch of sugar. Stir to combine.

  4. Add meatballs to the sauce and make sure they’re well coated. Cover and cook for 15-20 minutes.

  5. In a pot cook some store bought spaghetti and when it’s just about done cooking, reserve ½ a cup of pasta water.

  6. Strain pasta.

  7. Remove meatballs from sauce.

  8. Add your ½ cup of reserved pasta water back to the pasta before adding your sauce. Mix to combine.

  9. Add spaghetti to a bowl and top with meatballs and additional parmesan cheese.


Apple Brown Betty

  1. In a bowl, combine ½ a pound of brown sugar with 1 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp allspice, and ⅛ tsp ground cloves. Mix to combine.

  2. Core and slice 10 granny smith apples.

  3. Butter your casserole dish and add in about half of your sliced apples.

  4. Sprinkle with some of your brown sugar mixture and then top that with some breadcrumbs.

  5. Add the rest of your apples, the rest of your brown sugar mixture, and some more breadcrumbs.

  6. Slice a whole stick of butter into thin slices and place them on top of the breadcrumbs so they cover the whole surface of the apple brown betty.

  7. Cover and bake at 375°F for 20 minutes. Uncover and bake for an additional 15 minutes.

  8. Let cool for 5 minutes, serve and enjoy!
